What are Beignets?

 Beignet “Ben-Yay” is a fried dough pastry that originated in ancient Rome and later made its way to France. It is a 17th-century breakfast treat that is usually consumed right after frying. People use different toppings such as powdered sugar, fruit sauces, or granulated sugar. Our beignets are handmade with love, and we use modern techniques to make them even better without compromising the original recipe. We pride ourselves on using fresh ingredients with no preservatives. We fry the dough using traditional methods but with a modern twist. Our beignets and other baked goods are made fresh every day. We want you to enjoy our homemade treats while hot and fresh, so we fry them inside our beautiful food truck. Luce Haefke – Owner & Chef

Bonjour!!! I’m Luce, as a modern beignet chef, I’m all about creating mouthwatering treats. Growing up as the child of a diplomat, I was blessed to explore different countries and indulge in their exquisite cuisines. After being inspired by all the unique flavors I encountered across Africa, Asia, Europe, and America, I decided to become a self-taught chef. My passion for crafting delectable beignets stems from a cherished family recipe passed down by my grandmother. Sharing this love for cooking with my daughter Amaryss has been an incredible bonding experience. We enjoy adding contemporary twists and surprising ingredients to our beignets, making them a beloved part of our family’s meals and treats. To ensure that you receive only the best, we prepare everything fresh to order and use only the finest natural ingredients. Our goal is to create everything with love and share our modern take on this classic pastry with you. I can’t wait to hear all about your experience with our products. Bon Appetit!

Amaryss Haefke – Sous Chef and Baker

Hello, my name is Amaryss. I made my debut as a teenager in 2023. As a young lady, I prefer not to disclose my age. I am known as the “Cookie Master”, thanks to my passion for cooking and baking that started at the age of 8. I learned from the best, my mom, and my Oma, who taught me all about our family’s baking recipes. Although I love to cook, baking has become my favorite activity in the kitchen, especially during holidays. I enjoy wearing my apron and baking some of the finest French and German cookies! Currently, I am working on a book called “Kidnapping The Kitchen” where you will discover some of the simplest and most delicious recipes. Stay tuned! I am excited to bake for you. Melissa Rodriquez – Manager

Hi, I am Melissa, a proud mother of five from Queens, New York. My family and I decided to move to Georgia to escape the cold weather. Looking back, I’m grateful we made the move as it allowed me to meet Luce. With my experience in corporate America and being a mother, I was able to become a successful manager. Seeing my mother struggle to provide for us motivated me to grow professionally and strive for success. I strongly believe in empowering women, which is why I didn’t hesitate when Luce asked me to join the team. I decided to take up the challenge and be a part of creating this wonderful business that I am extremely proud of. It was a match made in heaven, together, we aspire to make the beignets!!!!
